2015 was a remarkable vintage in the Adelaide Hills resulting in fruit of outstanding quality. Matured for 9 months in French oak with some lees stirring to enhance the textural qualities of the wine. Brilliant pale straw colour with greenish highlights on the edges and some watery hue. Aromas of nectarine and subtle grapefruit merge into some biscuity oak and roasted almond characters with hints of dried honey and spicy nougat also apparent

This wine is produced from Semillon using the Cane Cut method, where each fruiting cane is detached from the vine. The bunches are left hanging until the fruit has dried and concentrated in flavour and sugar. Sweet and tangy with a hint of wood tannin complexity bringing texture. Upfront flavours of lemon, honey and savoury water crackers. While sweet and rich, mouth-watering acidity cleans the finish and contributes striking purity and length
