Even for locals is difficult to find really good paella. These places are not cheap, but believe me, they worth it.

Marco Munscher: Great hidden secret. If you like great Spanish food you have to visit this restaurant.

Luis FS: Has a fixed menu where you only choose the "paella". 8 different types of paellas, all amazing. My favorite is "Arroz Negro" and "Paella Bogavante". Good wine cellar.

FJK: Don’t let the name fool you. It has nothing to do with English food! :) The Paella here is second to none in Madrid!
